Cookie:

1 c soft butter

1 c sugar

2 eggs

1 tsp. baking soda

1/2 tsp. salt

1/8 c water

1 tsp. vanilla

3 1/2 c flour


Filling:

4 c apples- peeled, cored, and diced (or shredded)

1 c sugar

1/4 c flour (to thicken)

1 tsp. vanilla

1/2 tsp. cinnamon (you can add more if you want to)

(if you want to, you can use a regular apple pie filling. I just think this tastes amazing and as a side note, if you put this stuff on top of waffles/pancakes, it's awesome.)


Frosting:

1 package cream cheese

1 stick butter

1 tsp. vanilla

approximately 4 c powdered sugar (to texture)





Filling instructions:

Pretty much, place everything in a saucepan and mix well


Cookie instructions:

Cream butter and sugar

Add eggs and beat well

Add dry ingredients

Add water and vanilla

Cover in a bowl and chill in refrigerator for at least 30 mins.

Roll out and cut- you need two rectangles per cookie and you're gonna want to cut them a bit larger than the surface that will have the filling. Make sure you don't roll out the dough too much, you want it to be pretty thick and I always use a pizza cutter but that's not a necessity.

Spoon a bit of filling onto the bottom piece and place top piece on, sealing the edges together with your fingers.

Bake on a greased cookie sheet at 350 for 13-15 minutes.


Frosting instructions:

Cream it all together in the mixer, adding powdered sugar until it's thick enough (if you accidentally get it too thick, it can be corrected with a little bit of milk)

Spread on cookies as desired
