Microwave Twice-Baked Potatoes

5 Potatoes

2 Slices of Bacon (optional)

1 Green Onion (optional)

1/2 c Sour Cream

4 Tbsp. Butter

1/2 tsp. Salt

1/2 tsp. Pepper

1 c Shredded Cheese (optional)


Wash and dry potatoes then prick with a fork

Cook in microwave for 10 minutes

Cook and crumble bacon

Slice green onion and set aside

When potatoes are done and slightly cooled off, slice in half and scoop the potato out of the skin and into a bowl. Set skins aside for later

Mix sour cream, butter, salt, and pepper in with the potato until well blended

Scoop mixture back into the skins

Put on the toppings (cheese, green onion, and bacon) as desired and put back in microwave until the cheese melts (or for about 1-2 minutes)
