I realize that Buffalo wings got their name because they were invented in the city of Buffalo, but it really does invoke the mental image of flying buffalos.  I'm imagining them sailing across the prairie with big majestic Pegasus-like wings.  That would be a cool sight.  Of course knowing humans and in light of what we did to regular buffalos, you can be certain we'd have shot those suckers out of the sky to the point of extinction.  Hopefully at least some of the flying buffalos would flatten a few poachers when they landed.
