Emma: *pops out of nowhere* You need to low down your fire... The blue color have the highest energy than red or orange. So put your fire to color red or orange. Its okay if you cook slow because the fire is low. The heat transfer will occur perfectly... the meat will moist if the heat transfer is slow... that moist contains its flavor... and it can make your meat tasty and savory... thats why the steam meat is more tastier than a roasted meat.
