BREAD HALWA RECIPE

         Dedicated to amreenjanisha

Cooking Time: 30 minutes

Cuisine: South Indian

INGREDIENTS:

3/4 cup - 1 cup ghee (clarified butter)

1 loaf bread

6-8 cardamons (elaichi)

2 tbsps almonds (badam)

2 tbsps cashewnuts

1 litre milk (low fat)

1 ¼ cup sugar (add more or less as per your taste)

STEPS :

STEP 1: Cut the bread into bit-sized pieces. Heat three fourth cup of ghee in a cooking vessel and add the bread pieces and fry them until they turned into a golden brown colour.

STEP 2: Grind elaichi, almonds and cashewnuts to a fine paste.

(leave some almonds and cashewnuts aside for garnish)

STEP 3: In the mean time, boil the milk and add sugar and keep stirring it till it blends into the milk. Add the fried bread pieces and the remaining ghee to this mixture.

STEP 4: Let it be simmer till the bread pieces turns soft and cook in the milk mixture. Combine the nuts paste in the mixture. Garnish it with almonds and cashewnuts.

STEP 5: Serve it warm or refrigerate it until chilled and serve it. It tastes good in both warm and cold.

COOKING TIPS :

TO GET SOFT CHAPATIS - use a little warm milk along with warm water to knead the dough.

TO MAKE CRISPIER BAJJIS (PAKORAS) - add a little corn flour or rice flour to the gram flour while making the bajji batter. Also add some hot oil to the batter.
