🧂Ingredients🧂

Pav

🍥Warm Milk - 3/4 cup or 185ml

🍥Sugar - 1 tsp

🍥Dry yeast - 3/4 tsp

🍥Maida/Wheat flour - 1.5 cup or 220 grams

🍥Salt - 1/2 tsp

🍥Butter - 1 tbsp

🍥Salt/Sand(For baking) - 2 cups

Bhaji

🍥Butter - 1 tbsp + 1 tbsp

🍥finely chopped Tomato - 3

🍥Peas(Boiled) - 1/4 cup

🍥Potato(Boiled & Mashed) - 2

🍥Salt - 1 tsp (or as per your taste)

🍥Water - 1/2 cup + 1/2 cup

🍥Chilli powder - 1 tsp + 1/4 tsp

🍥Turmeric powder - 1/4 tsp

🍥Pav Bhaji Masala- 1 tsp + 1/2 tsp

🍥Kasuri Methi - 1 tsp + 1 tsp

🍥Finely chopped coriander leaves - 2 tbsp + 1 tbsp

🍥Ginger Garlic Paste - 1 tsp

🍥Finely chopped Onion - 1

🍥Lemon Juice - 1/2 a lemon

🍥Red food color(optional) - 3 drops


🍳Instructions🍳

Pav

🍴Take a bowl and add Warm Milk(3/4 cup) & Sugar(1 tsp), Dry yeast(3/4 tsp)

🍴Mix well and let it rest for 5min

🍴After the yeast activates mix it and add Maida/Wheat flour(1.5 cup) & Salt(1/2 tsp)

🍴Mix well and knead gently

🍴Knead for 5min

🍴Add butter and knead the dough

🍴Tuck the dough and Cover the dough and rest it for 1 hour

🍴After the dough doubles, slightly knead the dough

🍴Make a pav sized ball and tuck it

🍴Place it in a greased baking mould

🍴Rest for 20 minutes

🍴After it doubles brush the top with milk

🍴Take a large kadai or cooker

🍴Pour in the sand/salt

🍴Pre-heat for 10 min

🍴After 10 min place the vessel in the kadai/cooker

🍴Heat for 30min at medium flame

OR

🍴Just bake it in a pre-heated oven at 180 degree C for 30min 

🍴After baking rub a piece of butter on it 

🍴Cover it with a wet thin cloth and rest for 10min

🍴Unmould it

Bhaji

🍴Take a pan and add 1 tbsp butter, Tomato, Peas, Potato & Salt

🍴Saute for 2 min and add 1/2 cup water

🍴Mix well and cover the pan with a lid & boil for 10 minutes(at low flame)

🍴After 10 min mash the mixture and add 1 tsp chilli powder, 1/4 tsp turmeric powder, Pav Bhaji Masala(1 tsp), Kasuri Methi (1 tsp) & coriander leaves (2 tbsp)

🍴 Saute for 1 min and make hole in the middle of the mixture using your spatula

🍴Then add Butter(1 tbsp), Chilli powder(1/4 tsp), Pav Bhaji Masala(1/2 tsp), Kasuri Methi(1 tsp), Ginger Garlic Paste(1 tsp), Onion, Finely chopped coriander leaves(1 tbsp) & Lemon Juice(1/2 a lemon)

🍴Saute the middle portion for 1 min

🍴then add Red food color(optional)(3 drops)

🍴Mix the whole thing very well and add Water(1/2 cup)

🍴Mix well and adjust consistency

🍴Boil & mash for 5 min

How to toast the Pav: 

🍴Take a pan and add 1/2 tsp butter, a pinch of chilli powder & pav bhaji masala and 1 tsp finely chopped coriander leaves

🍴Saute at low flame

🍴Slit 2 pav at the center 

🍴Spread and toast it on both sides
